They have smaller, swept wings to lower any drag and to provide the proper lift at cruising speed.
At slow speeds they likely have the ailerons cranked near maxlift, just to stay aloft. (This likely causes or at least contributes to the fuel inefficiency, due to the increased drag.)
They are using volunteer to imply that the work cannot be payed

It more or less provides an extra cushion to prevent restart, as a coat; harness/lanyard; or anything else can’t inadvertently release it if it gets caught. The button may get detached but won’t allow the system to run. It also just requires a tad more thought and intention to release it.
There are also ones that need a key to release.
And the better designed e-stop buttons require the button a 1/4 to 1/2 turn CCW to release

The fuel is never really actively controlled by the user, more by its relation to the amount of air going into the intake.

If left connected most cars would drain theirs within a month or two. Also, if left discharging/ed like that for too long, the cells can start to sulphate, leading to a bad/non-working cell.
